Once you’ve had your fill of Valencia’s history and architecture, you’ll head to a nearby culinary school, where a friendly local chef will lead a demonstration in the art of tapas. The word “tapas” means cover, or lid, in Spanish. Said to have come from the old habit of placing a slice of bread or a piece of ham on top of one's wine glass (maybe to keep out insects), tapas has become a way of life in Spain.
